It is so cold and windy out that we decided to stay in tonight. We were thinking about eating out, but were actually feeling rather lazy. So we stayed in and cooked up a DiGiorno’s pizza for supper and are going to watch television and watch the ball drop and call it a year. This has been a rough year for many people; I hope next year is a better one for us all! With the presidential campaigns going on, it will certainly be very interesting to say the least!
Tonight we’re going to my favorite all-you-can-eat Chinese buffet restaurant. I love Chinese food – I could eat it every day! My favorites are sweet and sour chicken, fried rice, and lo mein noodles. And the meat filled dumplings – some places call them pot stickers. But I really enjoy the buffets because I can have a little bit of everything – I like all sorts of chicken and shrimp dishes! I am not a big fan of sushi, though, but the sushi bar looks beautiful – the sushi chef makes it all look like candy! What a rude awakening to my mouth to put something in that looks like candy but tastes like fish and seaweed!
Today our friend, Larry, used his Infrared Turkey Fryer/Grill for the first time. We cooked chicken thighs and drumsticks.
The infrared heat locks in flavor and keeps the food moist; you use no oil, so there is no chance that it will burn, splatter or spill and there is no oil to recycle or to clean up. The infrared heat circles the cooker and penetrates the meat evenly, so it is moist and juicy on the inside and nice and crispy on the outside.
The meat is healthier too, because any grease or fat drips away into the drip pan located at the bottom of the cooker.
It cooks much more quickly than traditional methods too, it only took 1/2 hour to cook several pieces of chicken and they were done to perfection with the skin cooked crisp and the color was a beautiful golden brown. And, there were no uneven burned areas such as when you use a grill.
I thoroughly enjoyed using it and the food was delicious!!!!
One of my favorite treats is lemon flavored cookies. In fact, I love lemon pie, lemon cake, lemon just about anything! I’ve been having a hard time finding my favorite lemon flavored cookies at the store lately. It’s very frustrating to have a favorite food and then suddenly not be able to find it anymore! My favorite lemon cookies are sandwich cookies that are plain shortbread cookies on the outside with a lemon flavored cream filling. There are other lemon flavored cookies on the market, but those are my favorite.
For about the past three or four months the store was selling them on the endcaps of the aisle, and now the endcap has something different on it. Looking in the regular cookie aisle, I can’t find them anywhere. So I had to settle for lemon flavored wafer cookies, which are good, but not as good as the lemon sandwich cookies. If they don’t have them by the next time I go grocery shopping, I think I’ll ask the store manager if they’ve stopped carrying them.
With Spring almost here, I decided to bring the grill out of the garage and clean it up. As soon as it is warm enough to be outside without a jacket, I will be using the grill to cook dinner. I love food cooked on the grill – it adds a special flavor to the meats that you just can’t duplicate on the stove or in the oven. I also like to use marinades on the meats if i am going to be grilling. So I will have a much larger variety of flavors for all the different meats very soon.
